Simple Vanilla or Chocolate Ice Cream


We LOVE ice cream!  For a rare and special treat, I got out an old ice cream maker I have had for 20 years (and had only used once) and made us some fresh, whole food ice cream!  These are simple ice creams without eggs or cooking.  They can be mixed up and processed in the ice cream maker in a matter of minutes.  Next, I plan to learn how to make a more complicated frozen custard, but for now, these are delicious!

Simple Vanilla Ice Cream 

1 1/2 cups whole milk, preferably raw
1 1/2 cups heavy whipping cream, preferably raw
1 teaspoon vanilla
1/2 cup honey, raw
1 pinch salt

1. Whisk together ingredients.

2. Pour into ice cream machine and process according to machine's directions.

3. Pour into covered container and store in the freezer.

Simple Chocolate Ice Cream

1 1/2 cups whole milk, preferably raw
1 1/2 cups heavy whipping cream, preferably raw
1/2 cup cocoa powder
2/3 cup honey, raw
1 teaspoon vanilla
1 pinch salt

1. Whisk ingredients together in a large bowl until cocoa powder is well incorporated. 

2. Pour into ice cream machine and process according to machine's directions.  (Ours takes 30 minutes.) 

3. Pour into a covered container and store in the freezer.
