2012 Thanksgiving

We had a lovely, casual and relaxing Thanksgiving this year with all the kids in attendance.  Josh and Lily had plans with her mom on Thursday and her dad on Saturday, so we took Friday.  It was our first time to have no feast on the actual day (Thursday) so I did some baking and cleaning and then we ate dinner at Burger King!  Jes spent the whole weekend with us which is always excellent!  On Friday, I roasted a turkey in my new convection oven and it turned out just fine.  We always have the same thing for Thanksgiving dinner and everybody has a favorite menu item.  Dad makes the cornbread stuffing which only he and Jes eat.  (Yuck!  But for cornbread stuffing, I hear his is excellent!)  I make Squash Stuffing Casserole which is Kate and my favorite Thanksgiving food ever!  Josh loves the sweet potatoes with marshmallows (but this year they were "too sweet").  And for everyone, the turkey, mashed potatoes, gravy, rolls with butter (Josh had eight!) and corn are must haves.  Jes made some yummy fresh cranberry orange sauce which Dad refused to eat in favor of the can shapped glob of jellied stuff.  But I loved it!  I baked a delicious apple pie on Wednesday that we ate on the spot.  I made a homemade pumpkin pie for Friday but it had egg shells in it and was a big disapointment! Next year, I'll try again. 
 
We have so much to be thankful for!

Softies For Babies!

Ted and I spent the day at Ragsdale's Auction House up Hwy 7 in Dover.  I was so excited when I saw two large bags full of new, hand crocheted baby blankets in beautiful colors! I was sure they would be snatched up quickly and probably go for more then I could pay.  I was wrong.  I got them for $15!!!  All 23 of them! ClaireAnna and I took them to Choices Pregnancy Recource Clinic the next Monday.  What a joy to be able to give something so beautiful to the mammas and babies that are helped there!

How You Doin?

We finally realized that it was time to find a replacement for Bocephus.  Ted decided he'd like to try a breed new to us called the Maremma.  We found this adorable guy at Iron Star Ranch, in North Fork, AR.  We are so grateful to owners, Greg and Jan, for allowing us to adopt him.

He rode on my lap in the truck, all the way home.  When I did put him on the floor, he just climbed right back up.  He's a cuddler!
 

Maremmas are a livestock guardian breed that originated in Italy, so we all decided that the new pup needed an Italian name.  We tossed around several: Vinnie, Mario, Fredo, even Pasta! But everyone finally agreed on Joey. 
As in...Joey Tribbiani!
 
 
I'm sure our Joey we grow up to be just as handsome!
 

I think he's saying it right here, "Hey, how you doin?"




For now, Joey lives in a large pen with two dairy goats who spend the night with him, but go out to pasture during the day. 

Please don't poo in my food bowl, thank you very much.


Joey will guard the goats and the sheep and hopefully, the entire barnyard.  We have no doubt that he will be a wonderful addition to our family!

Ozark Memories Day 2012


ClaireAnna rode The Grinch in the Ozark Memories Day Parade in Dover.  She has ridden Cindy in this parade for many years.  Last year, I walked The Grinch and he did great, but this year I was going to ride him.  At the last minute, Cindy appeared to be limping and we had to pull her out just as the parade was starting.  ClaireAnna had the choice to drop out along with me, or jump on The Grinch in my saddle and go on by herself.  Well, she wasn't about to miss riding is the parade so off they went, while I walked Cindy back to the trailer.  The Grinch was just wonderful.  No problems at all and ClaireAnna handled him beautifully.  I only know this because Dad was waiting by Dover Supermarket to video the event!  Good boy Grinch!  
 
 
 
 
 
After the parade, Dad took the horses home and ClaireAnna and I helped out in our Country Kids 4H Club bake sale.  I even entered the pie contest and won second place in the cream pie division! Yay me! Eventually, Jes, Kate, and Lily showed up and we walked around the festival with Kurt and Malcolm Penka, shopped, ate some food, and listened to some music.  It was a great day!

Glori's First Big Trail Ride

 

I took Glori on her first trail ride off the farm, ever.  I had attempted this years before, but she displayed such anxiety that I could not even ride her.  To be honest, I was scared to death that she would do the same kind of thing again.  But I needn't have worried.  Glori's behavior was picture perfect! She even remained calm as we rode along side the highway and a huge semi passed us.  Our ride lasted about 4 hours.  I'm encouraged that Glori and I will make a trail riding team yet! Now...to work on that pace of hers!

A Dream Come True

I'm sure she doesn't realize it.  She's just having a fun day with her friend, Dayna, who spent the night.  But this day, is a dream come true.  This day, is one I've been dreaming about since she was three years old - the day she first got Cindy and my mind started imagining what the future would be like. 

When I was 10 years old, I had a friend who had ponies.  When she'd invite me over, I was simply beside myself with joy.  We rode those ponies all over the countryside and it was some of the most wonderful fun I ever had.  I didn't have a horse of my own, but I pretended her pony was mine.  It was those days with Sabra and Nellie that cemented in me the joy and love for horses and riding that I have never gotten over.

It was eight years ago that I began imagining that someday, ClaireAnna would be able to share that kind of day with her friends.  I hoped that there would come a day when she'd have a friend over, and the two of them would get up early, saddle up a couple of ponies and head out for the trails.  Wouldn't that be something?!

Today was that day!

Getting to this day has taken patience, planning and discipline.  I've had to very carefully guide my daughter along the road to confidence and knowledge in horsemanship.  Cindy was a young pony, only 2, when we got her and Claire was only 3.  We could not just plop her up there and let them go.  And ClaireAnna was not naturally fearless on a horse.  Some of the things Cindy did scared her.  We had to go slowly with both of them.  We started out with lots of leading.

And they became friends.



We eventually graduated to me riding while ponying Cindy and Claire.  I don't have any pictures of that because I was on a horse!  We did that for many months.  Then we moved up to me walking alongside as Claire rode Cindy herself. 



This ride is one of the very first times that ClaireAnna rode independently as Ted and I walked along.

Eventually, Claire started riding lessons.  Cindy had two 30 day sessons of training at different points along the way and the two of them became a team.  They've done some clinics, 4H shows, lots of trail rides, camping trips, and jr. rodeos.  They've grown up.  Together. 



 During these growing up years, we made the decision to breed Cindy and she had a colt in 2008.  She named him The Grinch.  


And a new friendship began.

As ClaireAnna grew in her confidence on Cindy, she was also developing her relationship with The Grinch as he was growing up, and looking forward to the day she would eventually ride him.  We had him started when he was three. 

This is their first ride together.

We started all over building confidence, his conficence in us, her confidence in him, and my confidence in them.  We went slowly and took a full year to transition Claire from Cindy to The Grinch.  For a long time, we took him every where they went and just tied him up.  Then I started riding him at arenas and on trail rides while Claire continued to ride Cindy.  We took him to her lessons and she rode him in the round pen and then the arena and eventually on a trail ride. 

This is the first time she ever rode him outside an arena - their first trail ride with trainer Brad Palmer.

In the spring of 2012, Claire and I hit the trails hard with the goal of giving both ponies lots of wet saddle blankets and Grinch the trail confidence he needed.  We started out me riding Grinch and Claire on Cindy.  Then we started switching horses mid ride, and eventually Claire on Grinch full time.  In June of 2012, the transition was complete when she took him out after a 2 week layoff and got up on him with no lunging and without me getting him started.  He was perfect!   


This was a pivotal trail ride on the red trail at Lonesome D.  She rode him for five hours and he was awesome and we both knew that day she would be riding him from then on. 

So today was the day!

Claire invited a friend over.  And when they got up this mornig, we saddled these two ponies and off they went! All by themselves! It was a great day! And my heart is full!

Why Me?

I couldn't fall asleep last night.  Too many thoughts racing through my head.  But it wasn't what you're thinking......


I had come to bed late after enjoying some time playing around on the Internet.  I snuck into my bedroom where Ted, my sweet husband of 28 years, was sound asleep.  I grabbed my pink, sleeveless, cotton nightie.  The one my girls gave me, with little flowers all over it.  It is so cool and soft when I slip it on.  I just love it.  I wear it every night except on the nights that I wear the green one exactly like it. 


Once I put on the moisturizer and lip balm that I keep in my dresser drawer, I turned off the closet light.  Then, I adjusted my pillow...well, all three of them.  I sleep with two body pillows and one for my head.  The one for my head is squishy and soft and perfect.  I laid my head on it, flipped back my hair, pulled my favorite comforter (One I've had for 20 years) up over me, and relaxed into my bed. 


It was still really hot outside, but last night, the temperature in the house was cool and comfortable.  Ted had the bedside fan blowing upward to circulate air and the whole room felt so refreshing after the long, hot, August day.  It smelled great too, from the freshly washed cotton sheets on the bed and the scent of a delicious, new candle my dear friend gave to me that was sitting on my nightstand...Cupcake, I think. Yum!


As I laid there in my bed, enveloped by every kind of comfort, I realized that my hip, the one I've had twice replaced, was not hurting.  Not at all.  In fact, nothing was hurting anywhere on my body and all I could feel was sweet, pleasantness with all of my senses.  And then it hit me......Why me?


Somewhere, right now, someone is sleeping without a pillow...or a blanket....or even a bed.  Someone is too hot or too cold because they've no electricity, no air conditioning or fan or heat.  Someone, somewhere went to bed alone....friendless....or terrified. Someone can't sleep because they are worried, depressed or in pain. Right now, someone is sleeping in their dirty clothes, or in no clothes at all.  Right now, someone, somewhere is trying to sleep in spite of the stench of the open sewer just outside their glassless window, or pangs of hunger, the buzzing of too many mosquitoes or a very real danger lurking near by.


Why me?

  
So I started thanking God for all the little things that were making me comfortable right then.  Electricity. Air conditioning. Fan. Fresh air. House. Roof. Soft bed. Clean sheets. Favorite blanket. Pillows. Soft, clean nightie. Dresser. Moisturizer. Lip balm. Candles. Friends. Cupcakes. Painlessness. Husband. Happiness. Joy. Peace.


And then I spent some time imagining what my life would be like without each of them...........


And praying for those that do not have them.


Why me indeed.


Last night, I couldn't sleep because of the fact that I was so very comfortable! But even more so, because I was keenly aware that I was not uncomfortable.  It was my intense gratitude for all these undeserved blessings that kept my mind occupied.  And right on it's heals, was the compassion that filled my heart for those who are in uncomfortable and even unbearable situations.  I am so grateful to God for the reminder that "there but for the Grace of God, go I," and that even the smallest comforts are blessings that should not be taken for granted.

July 27th....1982, A Love Story Begins

It was spring, 1982, and I had just gotten the best job! I worked at Marriot's Great America in Gurnee, IL (Marriott's - as the locals called it - later became Six Flags Great America.)  I was a "dolphin trainer."  No lie!  Through an amazingly weird set of circumstances, I found myself, at age 18 and having just graduated high school, working as a dolphin trainer, emceeing dolphin shows at a theme park. 
See! That's me! And Nemo and Neptune!


I found this photo, below, on the Internet and that is not me on the ladder feeding dead fish to two dolphins as they jump towards my outstretched hands, but it could have been!  I did that!  This is the exact same theater I worked in.

This one IS me with a dead fish in my mouth practicing a new trick that didn't go so well.  I got a nice black eye from a fast moving rostrum to the face.


We put on five shows a day.  I had a dressing room.  It was fun.



Ted also worked at "Marriot's" that year.  He'd worked there for several years by that time, ever since before the park opened.  His house was just down the road.  He was 20 years old, and working his way through college.  His job wasn't as fun as mine.  He was in maintenance, and among other things, one of his responsibilities was to get Wilderness Theater cleaned up and ready for show time each morning. He did that by hosing down the theater seats with a giant fire hose.  These are the very seats he had to clean.  This is where I first saw him.  Right there, in those seats! With a giant fire hose in his hands.  I called him "the hoser."  He was tall and tan, and had jet black hair.  I thought he was beautiful.

So by about 8:00 A.M. every morning, Ted would be working his way through this theater with his giant water hose making sure all the leaves, debris, garbage and sticky cotton candy residue from the day before was thoroughly washed away and I made sure I was sitting out on stage, across the pool from him, playing my guitar or petting a dolphin or reading a book.  I could have just hung out in my dressing room till show time, but I had other plans.  I told all the other girls who worked in Wilderness Theater to stay away from the tall, black haired "hoser guy."  "He's mine," I said.  I told everybody else I knew to tell him the dolphin trainer liked him.  I told Kathy Parent, my fellow dolphin trainer, that someday I was going to marry that handsome, black haired hoser.  I had yet to stand within 50 feet of him.

I had imagined for weeks what the hoser would say to me should we actually come face to face, but it never happened.  I waved to him, smiled at him, flirted with him as best I could from across the dolphin pool, but for almost three, agonizing months, we never met. 

Then one day, July 27th, 1982, my life was changed forever.

Another responsibility that Ted had was to empty the large garbage can that was positioned outside the gated back-stage of Wilderness Theater.  He normally never came into that area, it was dolphin people only.  But one day, a co-worker of mine sneakily dragged the garbage can Ted was supposed to empty into the back-stage and up to my dressing room trailer door.  I swear.  I didn't do it

It was hot that day, over 100 degrees.  I had just finished a show and gone back stage.  I needed to cool off and nobody else was around, so I took off the shoes, shirt and shorts that were my show costume and lied down in my swimming suit on the cement platform of the back part of the stage.   I then proceeded to close my eyes and, with a garden hose, douse myself with cool water.  After a few minutes, I opened my eyes.....and low and behold....the hoser was standing over me.  He had come back stage looking for the garbage can.  I hadn't even heard the gate open or his footsteps as he walked up.  But there he was! Right above me! And there I was, dripping wet and barely able to speak!  But I knew I couldn't mess this up so I sat up, turned off the hose and with water still dripping from my hair into my face, I spoke first.....

"I know your name. It's Ted."  

(His Marriott's name tag said "Rocky" because the girl in the office who made the tags thought he looked like Sylvester Stalone.)

"How do you know?" He asked.

"I've been asking around about you."

"What are you doing Friday night?" He asked.

"Nothing."

"Do you want to go out?"

"Sure."

And he turned and walked away. 

July 27, 1982.  The most perfect day of my life so far. 

Later that day, he came back around to my theater and we took a break together, chatted and got to know each other a little bit.  Eventually, I told him that my car was in the shop and my dad was going to be picking me up from work, a 30 mile drive, each way.  Then he said, "Call your dad and tell him not to come.  I'll take you home."  It didn't really matter to me what we talked about after that. 
I was gone.  It was over.

This is me, the week before we met.  

 On our first date, I had asked Ted if he'd consider growing a beard.  He asked me if I'd consider growing my hair long.  This is us on Thanksgiving of that year, exactly four months after we met.  He's had a beard and I've had long hair ever since.  


We never spent a day apart after that.  We saw each other every day from July 27, 1982 to July 27, 1983.  We spent that whole day back at Marriott's - the day we celebrated our 1 year anniversary and officially announced our already long agreed upon engagement.

And then we saw each other every single day from July 27th, 1983 to August 17th, 1984, the day we were married before our friends and family.  Look at that beautiful black hair. (Swoon.)


It's been exactly 30 years since that day....that perfect, wondrous day that all the future happiness of the last 30 years hinged upon.  It's been 30 years since I found the other half of me.  It's been exactly 30 years today since God favored me with a blessing I would never deserve.  I'm older now....but I'm not.  It's been a long, long time since then.....but it was yesterday.

Your name is Ted. 

I still can't believe you are really mine. 

 I'll love you till the day I die.

Another Giant Lost

One of the saddest things for me on the farm is to lose a large tree.  We have lost so many over the last several years, from wind or lightning, that I couldn't even count them, giant oaks, sycamores, sweet gums, hickories, maples,walnuts, cherries...so many.  At first, it was always a shock.  What?! That giant tree?  Down?  I don't believe it! One year, in one storm, we lost over 30 large trees. It was more then a shock.  It was a tragedy.  By now, I've come to expect it.  It's just the way it is.  Giant trees fall.  But gosh, I sure hate it.  I especially hate it when it happens to an especially favorite tree.

It's not a huge tree, but quite a bit larger then it looks in this picture.  It was a sycamore that stood a bit off by itself just as you enter the bottoms along our farm road.  In the summer, (still looking for a summer picture), it was full and shady and gorgeous.  In the winter, as it is in the photo above, it was even more beautiful, white and tall and reaching against the bright blue sky.  I loved this tree.

Here is my favorite sycamore today. 


Sad.  A mild windstorm was all.  We didn't have any other damage.  Just this one tree.  So sad.  The view is so different now, as we come around that corner...so much smaller then it was.  The big ones grow so slowly, and there are less of them than the cedars and other scrub trees.  As they fall, these smaller scrub trees take their place and the landscape becomes completely different.  Each of the old ones is so special to me.  What will our farm look like in 10 years?  20?  I can't imagine it with another 50 or 100 old-growth trees down.  But fall they will, as they do every year.  There is nothing we can do to stop it. I think I'm going to have to start protecting some of the oak, hickory and sycamore saplings we have.  I'll put some wire around them, transplant some to better locations, cut the cedars from around them to provide more light and water.  It may not make a difference for many, many years.  But it's all I can do to try and preserve the beauty that I used to take for granted.  I am so grateful that I knew this lovely tree for the time that I did.  I will miss it for years to come, every time I turn that corner and see nothing but sky straight ahead instead of that pretty white bark.

Southwest Stuffed Peppers


This recipe is very similar to our Mexican Stuffed Shells, but is low carb.


Ingredients:
Olive oil
1 lb lean ground beef, goat, turkey or pork
1 large chopped onion
1 large grated carrot (optional)
1 Tb taco seasoning
3 bell peppers, halved and seeds removed (red, yellow or orange are best in this dish but green are fine too.)
1 can black beans
1 cup or can of corn
16 Pace Picante sauce
Shredded cheese, (your favorite kind)
Sour Cream

Preheat oven to 400 degrees.  Lightly coat the peppers with olive oil and roast in a 9 X 13 baking dish about 25 minutes till just cooked through.  Remove the peppers from the oven and allow to cool until you can handle them.  Brown meat in saute pan and drain.  Saute onion and grated carrot in oil till onions are translucent.  In a large bowl combine meat, onions & carrots, seasoning, beans, corn, and salsa.  Stuff mixture into the peppers.  Sprinkle with shredded cheese.  Bake in the 9 X 13 pan for another 15 - 20 minutes.  Serve with sour cream.

You can add rice to this stuffing if you like or any other vegetables.

Ted's Favorite Enchiladas

Ingredients:
1 lb ground beef (or goat)
1 medium vidalia onion, chopped
1 can black  beans
1 can whole kernel corn (or 1 1/2 cup frozen corn)
12 small corn torillas
12 ounces sharp cheddar cheese, shredded
2 cans (15 oz.) enchilada sauce

Brown ground beef and chopped onion in saute pan.  Drain.  Add black beans, corn and half the cheese.  Warm each tortilla in a saute pan sprayed with cooking spray or brushed with oil.  Spray or oil a 9 X 13 glass pan.  Fill each tortilla with ground beef mixture, roll and place in pan seem side down.  Pour enchilada sauce over top and sprinkle with remaining cheddar cheese.  Bake at 350 degrees for 30 minutes till bubbly.  Serves with shredded lettuce, diced fresh tomatoes and sour cream if desired.  Serves six.

You could make these with low carb tortillas if you like.  Less and/or low fat cheese and lean ground beef or ground chicken or turkey would make them lower in calories.

RECIPE: Strawberry Jello Cake

We make this cake at Easter.  It's pretty, colorful, festive, moist and yummy!

Ingredients:
1 boxed white cake plus ingredients to make it
1 large box strawberry Jello
Cool Whip
Strawberries
Granulated sugar

Bake the cake in a 9X13 inch pan according to directions.  Allow to cool.

Mix Jello with 2 cups boiling water and stir till desolved.  Add 1 cup cold water. 

Poke many holes in the cake with a straw. 

Pour Jello over cake and refrigerate till set.

Frost cake with Cool Whip.

Slice strawberries and sprinkle in a little sugar to help make a syrup.  Regrigerate till ready to serve. 

Serve a slice of cake with some strawberries.
