3 cups mixed salad greens
2 radishes, grated
1/8 cup carrot, grated
1/4 cup cucumber, chopped
1/2 medium tomato, diced
1/2 cup cauliflower, chopped
1/4 cup broccoli, chopped
1 tablespoon sunflower seeds, dry roasted with no oil added
1 ounce cheddar cheese, grated
1 tablespoon extra virgin olive oil
2 tablespoons raspberry vinegar
1. Put all but oil and vinegar in a large bowl.
2. Combine oil and vinegar in a small jar and shake.
3. Pour onto salad.
The amounts in this recipe are guesstimates. We don't usually measure, but just add what looks good to us.
